My Favorite Gingerbread

Mix dry ingredients in a bowl:
  • 2-1/2 c whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 tsp ground ginger
  • 1 Tbsp finely grated orange rind
  • 1/2 tsp salt
  • Stir in 1/2 c raisins (golden are good)

Mix wet ingredients together in a separate bowl:
  • 1/3 c canola oil
  • 1 c molasses or sorghum
  • 1-1/4 c orange juice

Add dry to wet ingredients and stir to mix. Pour into greased 9" x 13" pan and bake 30-40 minutes at 350 degrees (will be very moist). Freezes well.

Also good with one chopped apple added, or serve warm with applesauce on top.
