- 2-1/2 c whole wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 2 tsp ground ginger
- 1 Tbsp finely grated orange rind
- 1/2 tsp salt
- Stir in 1/2 c raisins (golden are good)
Mix wet ingredients together in a separate bowl:
- 1/3 c canola oil
- 1 c molasses or sorghum
- 1-1/4 c orange juice
Add dry to wet ingredients and stir to mix. Pour into greased 9" x 13" pan and bake 30-40 minutes at 350 degrees (will be very moist). Freezes well.
Also good with one chopped apple added, or serve warm with applesauce on top.
