Spicy Cheese Bites

  These are not your mother's thumbprint cookies! Spiced up with the hot pepper powder I make by grinding my dehydrated home-grown jalapenos and filled with hot pepper jelly, these are crispy, zesty and satisfying. They were a hit with my Christmas guests who were my guinea pigs for this new creation.
    This is my variation of a recipe from my friend Sandra, who shows my paintings in her art gallery. The original recipe called for crispy rice cereal, which typically includes sugar, salt, vitamins, and other ingredients I don't want added to my food. Substituting rice crackers which have just 3 ingredients: rice, oil and salt, makes for a healthier treat. Next time, I'll go one step further... instead of the crackers I'll try using brown rice flour and a small amount of coconut oil - and eliminate the salt, since the cheese provides plenty. I make these gluten-free by using GF flour also, but regular wheat flour can be used. I used a hot pepper jelly made by the nearby Menonnite community and it is yummy!

Hot Pepper Cheese Crackers {Gluten-free}

INGREDIENTS
rice crackers*, enough to make 2c of crushed cracker crumbs
4 c grated sharp cheddar cheese
2 c all purpose gluten-free flour
1 c softened unsalted butter
1/2 t ground pepper
1 t paprika
1 t hot pepper powder or chile powder (adjust to your taste)
hot pepper jelly

INSTRUCTIONS
To crush the crackers, place them in a zipper bag and roll with a rolling pin until crushed into small pieces. Whirl the cheese in a food processor to make it finer then gradually add all other ingredients except the cracker crumbs and jelly. Dump into a bowl so you can mix in the cracker crumbs - I found my hands to be the best tool for this step.

Shape dough into 1" balls and place on an ungreased cookie sheet lined with baking parchment, placing them 2" apart. Press to flatten slightly, then push your thumb into the center just enough to make a small indent.

Bake at 350°F for 15 minutes. Remove from the oven, and spoon a small dollop of hot pepper jelly in the center of each. Bake an additional 10-13 minutes, until crispy and golden.

Alternately, if you don't want the hot pepper jelly filling, you can flatten the balls of dough with a fork before baking, then bake for a total of 25-28 minutes... see the photo below.

Remove to a rack to cool.

* I used Nabisco Poppy & Sesame Seed Rice Thins, whose ingredients include: white rice flour, safflower oil, millet, poppy seeds, salt, mustard flour and sesame seeds. The poppy seeds show up as the black specs in my photos of the dough and baked crackers. You can use Nabisco GF Original Rice Thins for fewer ingredients. Watch out for added sugar in other brands of rice crackers. It took a little less than 2 boxes to make 2 c of crumbs.

Fiesta Black-Bean Salsa

This is a good summer harvest appetizer, served with corn chips, which I derived from different salsa recipes my friends have made. The proportions are not critical, and you can mix it with different veggies than those on my list. My ingredients make it very colorful, in addition to being really tasty, thus the name. Of course you can use fresh corn and/or your own cooked beans where I've suggested canned. Adjust the "heat" to your taste.
Ingredients
  • 1 14-oz can of black beans
  • 1 15-oz can of organic corn (or 1-3/4 c of fresh cooked corn kernels)
  • 1/2 c chopped red onions
  • 1/2 fresh jalapeno, including seeds
  • 1 cup of loosely packed cilantro leaves
  • one roma tomato
  • 1 cup of chopped sweet peppers (all one variety or a mixture of colors)
  • juice of one lime
  • 2 T rice vinegar
  • 1/2 t ground cumin
  • 1/2 t salt (omit if your beans have salt)
  • 1/2 t hot jalapeno powder *
* I dehydrate and grind my home-grown red jalapenos into a fine powder, but you could use chili powder or hot pepper drops instead.

Directions
Rinse and drain the black beans and the corn, and put them into a mixing bowl. Chop the jalapeno (carefully) and add. Chop the cilantro and other veggies. Add them and all the other ingredients, and stir to combine. Refrigerate for at least an hour before serving so the flavors can blend. Nice served with corn chips.
 

Keep in mind that much of the corn (and available garden corn seeds) grown in the US are now genetically-modified (GMO). Not only are there potential health and environmental problems from GMO crops, but the ability to save and replant seeds is denied by these Monsanto-produced seeds. Growing your own corn from heirloom seeds or buying organically grown corn and corn products can help you avoid GMO corn.

Tabouli, Fresh from the Garden


I love to make this salad / appetizer when the tomatoes, scallions, and herbs are fresh from my garden. Tabouli (aka tabbouli, tabouleh, tabbouleh) is a traditional Middle Eastern salad. Bulgur is a quick-cooking version of whole wheat kernels which have been soaked, boiled, dried, and cracked after the bran is removed. For a whole grain variation, I sometime use 2-1/2 cups of cooked quinoa in place of the bulgur.
  • 1 c bulgur wheat
  • 1 t salt
  • 1-1/4 c boiling water
Mix the bulgur and salt in a heat-proof bowl. Pour the boiling water on top and stir. Cover loosely with a towel and let stand for 30 minutes. Drain if necessary.
  • 1 c chopped parsley, packed
  • 1/2 c chopped scallions
  • 2 T chopped fresh mint
  • 1 c peeled tomato
  • 1/4 c olive oil
  • 1/4 c fresh lemon juice
  • salt & pepper to taste 
Mix the above ingredients with the bulgur and chill until serving time. Traditionally served with pita bread, and Scoops work well too.

Smoked Salmon Pizza

I can't claim to have invented this yummy concoction - years ago we were served a similar creation as an appetizer by our friend Pam, owner/chef of Coconut Cove in George Town, Exuma, Bahamas. This is my version. I must admit, Stuart was curious when I ordered by usual veggie pizza plus a baked pizza crust with no toppings to take home!
  • one 8" baked pizza crust
  • 4 oz cream cheese, softened
  • 4 oz smoked salmon, sliced into thin pieces
  • 4 scallions, cut into small rounds
  • 1 Tbsp capers, drained
  • 1 tsp dill weed
Spread the cream cheese over the pizza crust. Layer the other ingredients over the top in the order listed. Serve cold or at room temp.
